Apple Cranberry Brie Quesadillas with Hot Honey
These sweet and savory quesadillas are filled with creamy brie, crisp apple and tangy cranberry sauce, then pan-fried until golden. A drizzle of hot honey and a pinch of sea salt on top balances the richness with a little heat. Cut them into wedges for a holiday appetizer, a snack or a fun lunch.

Preparation Steps
Lay the tortillas out and cover one half of each with brie slices. Top the brie with a layer of apple slices and a few small spoonfuls of cranberry sauce, then fold the tortillas in half.
Heat a little of the butter and olive oil in a large skillet over medium heat.
Cook one or two quesadillas at a time for 2 to 3 minutes per side, pressing gently with a spatula, until the tortillas are crisp and golden and the brie has melted. Add more butter and oil to the pan for each batch.
Transfer to a cutting board and let them rest for a minute so the filling sets slightly, then cut each into wedges.
Drizzle with hot honey, sprinkle with sea salt and a few thyme leaves, and serve warm.
Tips & Variations
- Slice the apple as thinly as possible so it softens slightly in the time it takes the cheese to melt.
- Pears work in place of apples, and fig jam can replace the cranberry sauce.
- Quesadillas are best fresh. Refrigerate leftovers for up to 3 days and reheat in a dry skillet over medium-low heat until hot.
