This French-style ice cream starts with a vanilla bean custard of cream, milk and egg yolks, which makes it extra smooth and rich. Juicy sugared strawberries are folded in at the end of churning. It is a summer treat worth the chilling time, perfect on its own or with cake.

Homemade Strawberry Vanilla Bean Ice Cream

Preparation Steps

1Step 1

Toss the diced strawberries with 2 tablespoons sugar and leave for about 30 minutes, until they release their juices. Cover and refrigerate until needed.

2Step 2

Put the cream, milk, half of the 3/4 cup sugar, the salt and the vanilla seeds and pod in a saucepan. Heat over medium heat until steaming with small bubbles at the edges, then take off the heat.

3Step 3

Whisk the egg yolks with the remaining sugar until smooth and pale. Slowly pour in about half of the hot cream in a thin stream, whisking constantly so the yolks do not scramble.

4Step 4

Pour the mixture back into the saucepan and cook over low heat, stirring constantly with a wooden spoon, until the custard coats the back of the spoon and reaches 170 to 175°F (77 to 79°C). Do not let it boil.

5Step 5

Strain the custard through a fine-mesh sieve into a clean bowl, remove the vanilla pod and stir in the vanilla extract. Cover and refrigerate for at least 4 hours or overnight, until completely cold.

6Step 6

Churn the cold custard in an ice cream maker following the manufacturer's instructions. In the last minute or two, add the strawberries and their juice.

7Step 7

Spoon into an airtight container and freeze for 2 to 4 hours, until firm enough to scoop.

Tips & Variations

  • The custard must be thoroughly cold before churning, or the ice cream will be icy and slow to freeze.
  • No vanilla bean? Use 2 teaspoons vanilla bean paste or extra vanilla extract. Fold in crushed shortbread or white chocolate chunks for added texture.
  • Store covered in the freezer for up to 2 weeks; let it soften for 5 minutes before scooping.
