Costco-Style Chicken Bake with Bacon and Caesar Dressing
This homemade version of the warehouse food-court favorite wraps a creamy filling of chicken, bacon, Caesar dressing and melted cheese in pizza dough. Each log bakes until golden, with a salty Parmesan crust on top. They make a fun weekend lunch or game-day dinner and are easy to wrap up for later.

Preparation Steps
Season the chicken with the salt, pepper and garlic powder. Heat 1 tablespoon of the olive oil in a skillet over medium heat and cook the chicken for 6 to 8 minutes per side, until golden and the thickest part reaches 165°F (74°C). Let it rest for 5 minutes, then shred or chop it.
In a bowl, mix the chicken, bacon, Caesar dressing, Italian cheese and green onions until evenly combined.
Heat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Dust the counter with the flour and roll the dough into a rectangle about 10 by 14 inches (25 by 35 cm). Let it rest for 10 minutes if it keeps shrinking back, then cut it into 4 equal pieces.
Spoon a quarter of the filling down the middle of each piece, leaving about 1 inch (2.5 cm) clear around the edges. Roll each one up tightly into a log, pinch the seam closed and tuck the ends underneath.
Set the logs seam-side down on the baking sheet, brush with the beaten egg and sprinkle generously with the Parmesan.
Bake for 20 to 25 minutes, until deep golden and the bottoms sound hollow when tapped. Brush with the remaining olive oil and let them cool for 5 minutes before slicing. Serve with extra Caesar dressing or marinara for dipping.
Tips & Variations
- Use rotisserie chicken to save time; you will need about 4 cups of shredded meat.
- Swap the Caesar dressing for ranch or pesto, or add chopped spinach to the filling.
- Wrap cooled chicken bakes and refrigerate for up to 3 days or freeze for up to 2 months. Reheat in a 350°F (175°C) oven until steaming hot in the center.
