No-Bake Peanut Butter Cup Pie with Chocolate Ganache
This pie tastes like one oversized peanut butter cup: a light, fluffy peanut butter and cream cheese filling under a smooth layer of chocolate ganache. It needs no oven beyond a pre-baked crust, and the candy topping makes it look festive. Serve it chilled for birthdays, potlucks or holidays.

Preparation Steps
Beat the peanut butter, powdered sugar and cream cheese in a large bowl until smooth and evenly blended.
In a separate chilled bowl, whip the cold cream until it holds stiff peaks.
Fold the whipped cream into the peanut butter mixture in two or three additions, gently, until no white streaks remain.
Spread the filling into the pie crust and smooth the top with a spatula. Chill while you make the ganache.
Put the chocolate chips and cream in a microwave-safe bowl. Heat in 30-second bursts, stirring after each, until melted and glossy. Let it cool for 5 minutes so it is still pourable but not hot.
Pour the ganache over the filling and spread it to the edges. Arrange the peanut butter candies on top.
Refrigerate for at least 4 hours, until set, before slicing with a knife dipped in hot water.
Tips & Variations
- Use a regular no-stir creamy peanut butter; natural peanut butter can make the filling oily and soft.
- A graham cracker or chocolate cookie crust both work well, and chopped roasted peanuts make a good topping too.
- Store the pie covered in the fridge for up to 4 days.
