Loaded Steak Fries with Peppers, Onions and Cheese Sauce
These loaded fries borrow the flavors of a cheesesteak: thin slices of seared ribeye with sweet peppers and onions, finished with a smooth homemade cheese sauce. It is a hearty sharing dish for game nights, casual dinners or a weekend treat.

Preparation Steps
Heat the oven to 400°F (200°C). Spread the fries on a large baking sheet, toss with the olive oil, salt and pepper, and bake until golden and crisp, following the package time or about 25 to 30 minutes for fresh-cut fries, turning once.
While the fries bake, heat the oil for the topping in a large skillet over medium-high heat. Cook the onion and bell pepper for about 5 minutes, until soft and lightly browned at the edges.
Push the vegetables to one side and add the steak in a single layer. Season with the garlic powder, smoked paprika, salt and pepper and cook for 3 to 4 minutes, stirring once or twice, until browned. Toss with the vegetables and keep warm.
For the sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute, then slowly pour in the milk, whisking all the time, until the sauce is smooth and thick enough to coat a spoon.
Take the pan off the heat and stir in the cheese and mustard powder until melted and silky. Add a pinch of salt to taste.
Pile the hot fries onto a platter, spoon the steak and vegetables over them and pour the cheese sauce on top. Sprinkle with parsley or green onions and serve right away.
Tips & Variations
- Partially freeze the steak for 20 to 30 minutes before slicing; it is much easier to cut into thin strips.
- Swap the ribeye for sirloin or thinly sliced chicken breast, cooking chicken until it reaches 165°F (74°C).
- Loaded fries are best eaten fresh. Store any leftover topping and sauce separately in the fridge for up to 3 days and reheat until steaming; re-crisp the fries in the oven.
