This platter brings together four grilled meats, all rubbed with the same smoked paprika and garlic seasoning, plus a pile of crisp fries and a quick pink dipping sauce. It is a relaxed, share-everything meal that works well for weekend barbecues and family gatherings.

Mixed Grill Platter with Ribs, Chicken, Sausages and Fries

Preparation Steps

1Step 1

Heat the oven to 425°F (220°C). Toss the potato fries with the vegetable oil, spread them in a single layer on a baking sheet and bake for 25 to 30 minutes, turning once, until crisp and golden. Season with salt and any extra spices while they are hot.

2Step 2

While the fries bake, stir together the olive oil, smoked paprika, garlic powder, onion powder, salt and pepper. Coat each kind of meat in the spice oil, keeping the raw chicken in its own bowl.

3Step 3

Heat a grill or grill pan to medium-high. Start with the ribs, since they take longest: grill them for 25 to 30 minutes with the lid closed if possible, turning every few minutes, until browned and tender and at least 145°F (63°C) inside.

4Step 4

Add the sausages and pork belly strips and grill for 10 to 15 minutes, turning often, until well browned. The sausages are done at 160°F (71°C) in the center, and the pork belly should be crisp at the edges.

5Step 5

Grill the chicken cubes for 8 to 10 minutes, turning occasionally, until golden and cooked through to 165°F (74°C).

6Step 6

For the sauce, whisk the mayonnaise, ketchup, paprika, lemon juice and hot sauce (if using) until smooth.

7Step 7

Let the meats rest for a few minutes, then pile them onto a large platter with the fries and serve the dipping sauce on the side.

Tips & Variations

  • Pork belly drips a lot of fat, so keep a cooler zone on the grill to move pieces to if flare-ups start.
  • Swap the pork for lamb chops or beef kebabs, or use sweet potato fries for a change.
  • Refrigerate leftover meat in a sealed container for up to 3 days and reheat in a hot oven until steaming; fries are best eaten fresh.
