Cheesy Baked Meatloaf with Tomato Sauce
This simple meatloaf is baked under a layer of tomato sauce, then topped with more sauce and plenty of cheese for the last few minutes. It is a cozy family dinner that goes well with mashed potatoes, rice or a green salad.

Preparation Steps
Heat the oven to 350°F (180°C).
In a large bowl, combine the beef, onion, breadcrumbs, egg, garlic powder, salt and pepper. Mix with your hands just until evenly combined; overworking makes the meatloaf dense.
Shape the mixture into a loaf about 8 x 4 inches (20 x 10 cm) and set it in a baking dish.
Pour half of the tomato sauce over the loaf and bake for 40 minutes.
Spread the remaining sauce over the top, sprinkle with the cheese and bake for 10 to 15 minutes more, until the cheese is bubbling and the center of the meatloaf reaches 160°F (71°C).
Let it rest for 10 minutes before slicing, then garnish with parsley and serve.
Tips & Variations
- Resting the meatloaf before slicing keeps the juices in and helps the slices hold together.
- Use a mix of beef and pork, or swap the garlic powder for a teaspoon of dried Italian herbs.
- Refrigerate leftovers for up to 4 days. Reheat slices covered in the oven or microwave until steaming hot.
