Cheesecake Fruit Salad with Berries and Pineapple
This fruit salad folds fresh berries, pineapple and mandarin oranges into a light, sweet cheesecake-style cream. It tastes like dessert but is quick to make and is popular at potlucks, cookouts and holiday gatherings.

Preparation Steps
Beat the cream cheese, sugar and vanilla in a large bowl until completely smooth and creamy.
In a separate chilled bowl, whip the cream until it holds stiff peaks.
Fold the whipped cream into the cream cheese mixture in two additions, keeping it light and airy.
Pat the fruit dry with paper towels, then gently fold the strawberries, blueberries, pineapple and mandarins into the cream.
Fold in the mini marshmallows if using.
Cover and refrigerate for at least 1 hour before serving so it firms up and the flavors meld.
Tips & Variations
- Drying the fruit well keeps the cream thick and stops it from turning runny.
- Raspberries, grapes, kiwi or sliced bananas all work; add bananas just before serving.
- Keep it covered in the fridge and eat within 2 days.
