Loaded Bacon Cheese Fries with Homemade Cheddar Sauce
These loaded fries are piled high with a smooth, homemade cheddar sauce and plenty of crispy bacon. Making the cheese sauce from scratch takes only a few minutes and tastes far better than the jarred kind. Serve them for game day, movie night or as a fun shared appetizer.

Preparation Steps
Cook the fries until crisp and golden: deep-fry at 350°F (175°C), bake at 425°F (220°C) for 20 to 25 minutes, or air-fry at 400°F (200°C) for 15 to 18 minutes, following the package for frozen fries.
While the fries cook, melt the butter in a saucepan over medium heat. Whisk in the flour and cook, whisking, for 1 minute without letting it brown.
Gradually pour in the milk, whisking constantly to prevent lumps. Simmer for 3 to 4 minutes, until it thickens enough to coat a spoon.
Take the pan off the heat and stir in the cheddar a handful at a time until melted and smooth. Season with garlic powder, smoked paprika, salt and pepper.
Pile the hot fries on a platter and pour the cheese sauce over them.
Scatter the bacon on top, add any optional toppings and serve immediately.
Tips & Variations
- Add the cheese off the heat; overheating makes the sauce grainy.
- Swap half the cheddar for Monterey Jack for a smoother melt, or add chili for chili cheese fries.
- Keep leftover cheese sauce in the fridge for up to 3 days and rewarm gently with a splash of milk until steaming; fries are best fresh.
