Banana Strawberry Chocolate Trifle with Ganache
This trifle swaps the usual custard and sponge for crushed vanilla cookies, fresh banana and strawberries, whipped cream and a rich chocolate ganache. It needs no baking and looks impressive in a glass dish. Serve it as a party dessert or a weekend treat.

Preparation Steps
Heat the cream in a small saucepan until it just starts to simmer.
Pour the hot cream over the chocolate chips in a heatproof bowl, leave for 1 minute, then stir until smooth and glossy. Let it cool until barely warm.
Spread a layer of crushed cookies over the bottom of a trifle dish or large glass bowl.
Add a layer of banana slices, then a layer of whipped cream.
Drizzle with some of the ganache and scatter over some chocolate chips and strawberry slices.
Repeat the layers until all the ingredients are used, keeping a little ganache, fruit and chocolate chips for the top.
Finish with extra whipped cream, decorate with strawberries and banana slices, sprinkle with chocolate chips and drizzle with the last of the ganache. Serve right away or chill for up to 4 hours.
Tips & Variations
- Toss the banana slices with a little lemon juice so they don't turn brown.
- Use raspberries instead of strawberries, or replace the cookies with cubes of pound cake.
- Cover and refrigerate leftovers for up to 1 day; the bananas and cookies soften over time.
