Garlic Parmesan Bacon Cheeseburger Biscuit Bombs
These are soft biscuit pockets filled with a cheesy beef and bacon mixture that tastes like a bacon cheeseburger. A garlic butter and Parmesan topping makes them golden and savory. Serve them as a game-day snack, a party appetizer or a casual dinner with a salad.

Preparation Steps
Heat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Brown the ground beef in a skillet over medium-high heat for 6 to 8 minutes, breaking it up, until no pink remains. Drain off the fat, season with the salt, pepper, garlic powder and onion powder, and let it cool for 10 minutes.
In a bowl, stir the cooled beef with the cream cheese, cheddar and bacon until evenly combined.
Press each biscuit into a round about 4 inches (10 cm) wide. Spoon 2 to 3 tablespoons of filling into the center of each one.
Gather the dough up around the filling and pinch the seams firmly so nothing leaks out. Set the bombs seam-side down on the baking sheet, a few inches apart.
Brush the tops with melted butter and sprinkle with Parmesan.
Bake for 15 to 18 minutes, until the biscuits are deep golden and cooked through underneath. Let them rest for 5 minutes, then sprinkle with parsley and serve warm.
Tips & Variations
- Seal the seams well and keep them on the bottom; an open seam lets the cheese bubble out and burn on the tray.
- Swap the cheddar for pepper jack or add a spoonful of diced pickles to the filling for a classic burger taste. Any leftover filling makes a good omelet filling.
- Refrigerate leftovers in a sealed container for up to 3 days. Reheat in a 350°F (175°C) oven for about 10 minutes, until steaming hot in the center.
