Peanut Butter Scotcheroo Cereal Bars
Scotcheroos are a classic no-bake bar: crispy cereal coated in a sweet peanut butter syrup and topped with a smooth layer of chocolate and butterscotch. Using cereal squares gives them extra crunch. They are perfect for potlucks, bake sales and holiday trays.

Preparation Steps
Grease a 9x13-inch (23x33 cm) pan. Put the cereal in a large greased bowl.
Combine the corn syrup and sugar in a saucepan over medium-high heat. Stir until it comes to a boil and the sugar dissolves, then remove it from the heat right away.
Stir in the 1 1/2 cups of peanut butter until smooth.
Pour the hot mixture over the cereal and fold gently until every piece is coated. Press it evenly into the pan with a greased spatula, without crushing the cereal.
For the topping, put the chocolate chips, butterscotch chips, 1/2 cup peanut butter and vanilla in a large microwave-safe bowl. Microwave in 30-second bursts, stirring well each time, until melted and smooth, about 1 1/2 minutes total.
Spread the topping over the bars and let them cool completely at room temperature, about 1 to 2 hours, before cutting into squares.
Tips & Variations
- Take the syrup off the heat as soon as it boils; cooking it longer makes the bars hard instead of chewy.
- Crispy rice cereal also works and gives the classic scotcheroo texture.
- Store in an airtight container at room temperature for up to 4 days.
