Hamburger Steaks with Mushroom Onion Gravy
Hamburger steaks are seasoned beef patties seared in butter and then simmered in a simple gravy with sauteed onions and mushrooms. It is an affordable, old-fashioned comfort meal that is easy to make on a weeknight. Serve it with mashed potatoes, rice or buttered noodles.

Preparation Steps
Mix the ground beef with the chopped onion, garlic powder, onion powder, Worcestershire sauce, salt and pepper until just combined. Shape into 4 patties about 3/4 inch (2 cm) thick.
Melt 2 tablespoons of butter in a large skillet over medium-high heat. Sear the patties for 4 to 5 minutes per side until well browned. Move them to a plate; they will finish cooking in the gravy.
Add the remaining tablespoon of butter to the skillet, then the sliced onion and mushrooms. Cook for 5 to 7 minutes, stirring often, until soft and golden.
Sprinkle the flour over the vegetables and stir for 1 minute.
Slowly pour in the beef broth, stirring and scraping up the browned bits, until the gravy thickens. Add more broth a little at a time until it is as thick as you like, and season with salt and pepper.
Return the patties to the skillet, spoon the gravy over them, cover and simmer over low heat for 5 to 7 minutes, until the patties reach 160°F (71°C) in the center. Serve hot.
Tips & Variations
- Make the patties slightly wider than you want them; they shrink as they cook.
- Add a splash of soy sauce or a pinch of thyme to the gravy for a deeper, more savory flavor.
- Refrigerate leftovers for up to 3 days. Reheat covered on the stove with a splash of broth until steaming hot.
